In just about 2 weeks spring is here officially! The time change happens in about a week and next week looks like high 40s and 50s here in Chicago land. The verdict...spring is almost here! That means I just have this coming week to cook in the winter section of my cookbook (remember my resolution?). I have a few ideas for this week for baked spiced apples for dessert and a yummy carrot, rice and cheese casserole. Last week I made an apple topping for our French Toast that was delicious!
I also made a pot roast with potatoes and carrots smashed up together with a side of a cabbage au gratin. It was all super yummy.

To celebrate the looooong awaited coming of the season next week we will have a celebration supper from one of my new favorite cookbooks. We'll be having an egg, goat cheese, and spring vegetable pie (sort of a fritatta actually), cream of asparagus and leek soup, and "almost spring" fruit salad. I can't wait! Yay for spring and yay for warmer weather!

Yummmm. That looks so good! I also love how your plates look under the food. I'm so tired of my plates. Oh well. Do you use the "Food you Crave" cookbook a lot? It looks interesting to me. I think I need another trip to the library soon!
