Home made desserts

Every few months I get the strong urge to make/bake all our desserts. It's hit again, mainly because we have so many things to use up. Today I made zucchini chocolate chip cookies. Despite my husband asking me why I am "always trying to ruin desserts by making them healthy" they turned out great! You can't taste the zucchini at all and actually I think I like this recipe better than the ones I've gotten on the bags of chips before. If you're feeling brave, give it a try!

ZUCCHINI CHOCOLATE CHIP COOKIES
(Makes about 2-3 dozen)

1 egg
½ cup butter, softened
½ cup brown sugar
1/2 cup sugar
1 tbsp. vanilla extract
Cream butter and sugars. When combined, add egg and vanilla.

1 cup white flour
1 cup whole wheat flour
½ tsp baking soda
¼ tsp salt
Combine in a separate, small bowl and then mix into liquid mixture

1 cup finely shredded zucchini
12 oz chocolate chips
Stir these into other ingredients, mix well. Drop by spoonful onto greased baking sheet, and flatten with the back of a spoon. Bake at 350°, 10 to 15 minutes.
