Last night I combined 2 of Anne's all time favorite foods in one delicious meal. If you ask Anne at any point what she wants to eat, for some reason she always says "Um...noodles!" So she winds up eating some form of noodle at least once a day. In addition, she'll always, always, always eat any cheese we give her. Lately she's LOVED cottage cheese and asked for it nearly every meal of the day. Last night, in a blast from the past, we had noodles and cottage cheese. My mom used to make this for us all the time as kids. And yes, it's as easy as it sounds. Warm noodles, cold cottage cheese. That's it. It's really good. The cottage cheese stays curded (it doesn't melt) and tastes almost like a cream sauce. Even if you don't like cottage cheese as much, eating it this way gives it a different taste. It's hard to explain but it's good. Trust me.
I found a recipe for "Great Great Pasta" in my "Simply in Season" cookbook. Since we get about 2 zucchini a week from our garden, I've been having to use every recipe I can find for zucchini. This recipe was basically pasta and veggies and then they took the cottage cheese, blended it with spices, garlic, and milk to make a cream sauce. Being pregnant and having delicate taste buds that change from day to day, that sauce did not sound good to me last night. So we had good old spaghetti and cottage cheese. I took zucchini and grilled them on our grill pan then poured a little Italian dressing over them. That was it. That was our meal. Anne, of course, loved it and was in heaven. If she could verbalize it, I'm sure she would say it was the best meal she's ever had in her entire life and why did I wait 2 years, 3 months, and 13 days to introduce it to her.

I think I've seen a recipe for mac and cheese that also has cottage chesse in it. I've never had it so I don't know if it's good or not but you may want to try to look it up online. I know you love getting new recipies!
