A red letter week ~or~ "We should eat like this all the time"

Again, Kudos to Ambre's blog and Green Smoothie Girl, both of whom have really inspired me to be eating considerably more healthy. This week was a great week for the Atwoods in that area.

First of all, we have had a smoothie almost every single day. On Sunday we bought some Kale to use in our smoothies (here's a side note on Kale from Wikipedia: "Kale is considered to be a highly nutritious vegetable with powerful antioxidant properties and is anti-inflammatory.[1]
Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium."). So almost everyday we've started our morning with 4-6 servings of fruits and veggies a piece. Pretty good if I do say so myself.

This week for dinners here's what we've had:
Sunday: Vegetarian chili made with 3 types of beans, one of them being a dried bean that I cooked from scratch.
Monday: Whole wheat pasta with spinach and zucchini added to the spaghetti sauce.
Tuesday: A super yummy, super easy rice and bean skillet made with brown rice, black beans, peppers and tomatoes.
Wednesday: Quinoa primavera (thanks Heather!) made with quinoa, zucchini and carrots. (Here's another note about quinoa, again from Wikipedia: "In contemporary times this crop has come to be highly appreciated for its nutritional value, as its protein content is very high (12%–18%), making it a healthy choice for vegetarians and vegans. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete food. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron.")

So all in all, we are feeling pretty good about ourselves right now. Let me know if anyone wants any of the recipes, everything was really easy and really yummy!

Side note: We also have dessert every single night and on Fridays usually finish off an entire pizza between the two of us. We are far from perfect or "healthy" but are working on the healthy part of it.

Congrats on a week of good choices, April! One day at a time, right? :)
Something I've learned about the beta carotene factor of greens is that our body needs saturated fat to actually convert the bc to vitamin A which is the whole point anyway, right? So make sure you're including some sort of dairy in the meal. I usually throw some yogurt into my smoothies or we eat bread and butter as well. It really does feel like such an accomplishment to have so many fruit and veggie servings under your belt before you (at least for me!) are even out of your pajamas!
I also agree that Robyn's a bit of a purist, but it would be nice to have her blender, her budget, and her experience. :) I've been really going to the Word lately to test some of what she says, especially given that a fair amount of her rigidity seems to be based in her faith which is different from mine. I don't want to be led astray by a false prophet, ya know? Test all things and hold to what is true, friend!

I don't know how healthy they are, but did you see that Kashi now has frozen pizza??
