Green Smoothie Updates

Green Smoothies are becoming a staple at my house. More than 50% of the time, we are having them for breakfast. In fact, I feel guilty now when I don't drink/eat them and I spend the whole day wondering how in the world I'm going to get enough fruits and veggies that day.

This morning our smoothies have 6 cups of fruits and veggies per person. Yep, you read that right. The FDA recommends that we all eat 3.5 cups of fruits and veggies (that's total, not 3.5 cups of fruit and 3.5 cups of veggie-no total. I think they break it up into 2 cups of veggie 1.5 cup of fruit) a day. Obviously we are blowing that out of the water.

I'm noticing personally when I drink my smoothies I consume so many more fruits and veggies. I used to be (haha! I still am!) very anal with my food and serving sizes. I have this thing where I don't like to eat the same food more than once a day. So if I had yogurt for breakfast, I would never have it for a snack. If I eat strawberries in my smoothie, I would never have it in the afternoon. I don't know-it's one of my quirks. I've been able to break out of that somewhat and, still not eat the same food twice in a day, but I've been able to eat more servings of it at the same time. So now I have 2 nectarines, where before I'd only have one. Or I eat half a cucumber with homemade hummus where before I would only have the "serving size" (whatever that is for a cucumber). So it's been really good for both of us.

I'm hoping to continue on this journey of uber healthy eating. We'll see...the past few days when we've had salad, we've smothered it with ranch dressing, real bacon bits and shredded cheddar cheese...it's so good! That's not the healthiest salad we could have...

I'm looking forward to our garden coming in-the zucchini and tomatoes are coming in really nicely. The carrots and eggplant are not coming in at all. :( The parsley is like a weed! Our little plant has grown to a bush! Unfortunately the basil has remained a little plant. I'm really excited for the zucchini and tomatoes to start coming in even though I know we are going to be swimming in it and pretty much eating nothing but zucchini and tomatoes for the next month! Still, I'm excited! Wish us luck as we continue our journey!

Congratulations on the 'green drink' I cannot bring myself to drink spinach. I am afraid I would not like it.

also good job on the garden! I wish we had one. This year was a little crazy for us though, maybe next year. This is the first year I have not grown veggies though :(

Believe it or not Elizabeth, you can't taste the spinach at all! I promise! That's the beauty of it!

ha ha ha, I remember in high school when you wouldn't share your food because then you wouldn't have the correct 'serving size'. lol
